From Warsaw: The Flavours of the Capital at the Lobby Bar

Picture a table lit by a softly glowing lamp, a glass of red wine and a plate that tastes like home, only cooked by a chef at the top of his game. That is the "From Warsaw" menu at the Lobby Bar of Polonia Palace Hotel.

We begin with classics in new clothes. "Gzik" pairs herring with new potatoes and cucumber caviar, while "Meduza" is a delicate pork trotter aspic with pickled gooseberries and Antonovka apple gel. Then comes Warsaw-style tripe soup in a rich beef broth, with a beef cheek meatball and lovage oil.

For the main course, choose Zielenica trout kissed with cherrywood smoke and served with Jerusalem artichoke purée, or beef roulades with chanterelles, a demi-glace glaze and potato gratin. Dessert brings apple fritters with rhubarb and chilli preserve, fig ice cream and buttermilk crumble.
